To understand, how big this in stitution is, it may be mentioned, th a t in one year has been slaughtered 95,205 oxen, of which were exported 24,930, while 38,000 were used by the city. According to the account the aggregate export was 85,492, of which the 24,930 whole carcases, 41,000 for conserves and 19,562 live animals. The value of the cat­ tle brought to the establishment was 44,003,000 K r., while in the swine-slaughte- ries the value was 27,656,800 K r. During the same year mere slaughtered besides 47,412 pieces of cattle, 1957 calves, 4845 sheep and lambs and 8327 swine besides a num ­ ber of horses — in all about 18 y2 million pounds (Danish) of meat in a year. In olden times the butche­ ring of cattle for human food in general was done by the butchers them selves; most of them had their shops on Ve- sterbrogade and here the blood was runnin g in strong cu r­ rents in the gu tter so the people preferred to walk through Gamle Kongevej on Garden to avoid the stench from the shambles. About 40 years ago all private butche­ ring, not controlled by the authorities, was abolished and at the same time the old clas­ sic »Trommesal« on the cor­ ner of Vesterbrogade and Gamle Kongevej ceased to ex­ ist. The name was derived from the fact, th a t a drum ­ mer announced the time, when the butchering was do­ ne and the sale of the meat would begin in the hall. When more hygienic condi­ tions came to reign, the un- healty public butcher-shops arouned the tower of the old Set. Nicolai Church and on Graabrodretorv, were remo­ ved. The new stock-yards with the slaughter houses and de­ partm ents for destruction of the waste were established near the harbour of the gas­ works and have developed w ith the City in a way, so
